hard boiled eggs
why are some hard boiled eggs sooo hard to peel while others so easy?
even eggs bought at the same time, taken from the same carton, boiled in the same batch eaten at the same time? I guess the real question is, how can one hard boil eggs to ensure they are easy to peel?

First thanks for bringing this up, now I got to have an egg salad sandwich for lunch
I find it?s easier to peel the eggs under running water, not sure on cooking them differently. Matt |

I've always found that letting the eggs cool off or placing them in a bowl of cold water and letting them sit for a bit helps.
Peeling them while they are hot can end up being messy. |

Doesn't Ronco make something to peel HB eggs with? I remember seeing commercials on TV for making "the worlds best deviled eggs" in just seconds. A miracle only riveled by the invention of sliced bread

Boiling eggs in salted water will make them easier to de-shell.

My wife cooked these, so of course they were perfectly cooked.
I didn't observer this batch, but her style is put eggs in water bring to boil cook for t1 minutes remove eggs and immediately plunge into ice water for t2 minutes She told me the reason for pluging them into the ice water was to keep the yolks from turning gray on the edges. the yolks were all perfectly yellow, but two of the three eggs I had for lunch stuck to the shell so badly I almost did not attempt the third. I was surprised to find the third egg peeled with the shell in three or four peices and came off perfectly clean. edit: I just read the link, and that is very close to how she cooks them. she turns the heat down to a simmer rather than turning the heat off completely.

You eat 3 HB eggs with your lunch? Does your wife know what a "dutch oven" is?

LOL Jeeper, if I ate 3 HB eggs for lunch - I would be very ripe for a good 24 hours. Dutch Oven indeed.
Somebody needs to invent a complimentary product to Beano - they can call it "Eggo" bwahahahahaa |
