We did tri tip (on sale at vons: 1.99 a pound) last weekend. For a webber, we started the coals, and once they were at optimum: I spread the coals out then. I put an old steel pan in the middle, with a little of bit of water, but that's not needed. The wood (should have been soaking for about 5 - 10 minutes) is placed on, and then I put the grill back on. Just when the wood starts to smoke, I put the tri tip in the middle and put the lid on. 15 minutes each side, then 10 minutes each side. Came out really yummy. For the trip tip, we did the basic salt and pepper rub. It smokes like all get up, that's for sure.

Question: what is not needed, the pan or water?

The water, I've done it with and with out and it doesn't seem to make a lot of differnce. It can be a pain to try to lower the pan in with water and all the heat going too.
